My plot is not rectangular

That's fine: draw the plot the way it's convenient and place the beds where they really are; set which way the top of the drawing faces. For each bed give moisture (a damp low spot or a dry slope) and soil; for the whole plot mark the slope, low spots and trees. Advice for your site goes into the PDF.
