How to store carrots and beetroot over winter?
Dig carrots and beetroot on a dry day before the long autumn rains: roots soaked by rain keep badly. Twist the tops off (don't cut into the root), don't wash them, let them dry in the shade for a day or two. Then lay them in boxes in a cool cellar, layer by layer, each layer covered with slightly damp sand so the roots don't touch. At 0–4 °C they keep until spring. Check now and then and take out any that start to rot.
